Tubing Adventure With Savannah

I decided to go tubing this past Saturday with a friend, my sister and my youngest child Savannah.  Which, was supposed to be my start to exercising again especially after all this rain we’ve had.  Well, we had a few mishaps or I guess you could say a series of unfortunate events.

In case you don’t know I live in Bryson City, NC.  You could also say I live in the Great Smoky Mountains!!! Very Beautiful especially in the Spring – Fall.  Winter is still pretty but, everything looks dead.  My favorite time of year is the Fall.  The leaves change into beautiful Autumn colors and it’s not so hot.  Oh and we have the best places for tubing. 🙂

I chose to go tubing down Deep Creek in Bryson City.  Very beautiful place to camp, hike, horseback ride, bike ride, and tube of course.  So, the hike up was great, I felt alive and ready to go.  Which, is the first time in a long time I felt that great.  We get down farthest spot you can put your tube in and we start our water fun and after the hike it was much deserved.

Fall 1: I put a life jacket on Savannah who is 17 months old and we set her on my lap in the tube.  Everything was great until little fall 1.  So, we go down the little fall and well, we fall out and Savannah screamed bloody murder.  I should mention that creek water is cold and I am pretty sure it was a shock to her.  We then get situated again and decide to keep going.  I thought to myself no big deal the worst fall is over.  The rest of the way is a piece of cake; I mean I’ve done this a million times.

Boy was I wrong…..

Fall 2: We get going and Savannah is now having fun again and we are heading down fall 2 when we hit a rock and it spins us backwards which, without a child is easy.  (So, when tubing you want to lean against not with the fall)  I was leaning against the fall when we hit rock and spun backwards but, now I am leaning with the fall.  I tried to lean against again but, it was to late and baby and I flipped over.  This wouldn’t have been so bad but, the current was very strong and fast.  Also, very rocky.  So, I hold Savannah up so she won’t hit any rocks and in doing so the current keeps sucking me under.  I keep swallowing water and I keep trying to get myself up but, I can’t.  Savannah is fine mind you it’s me that is drowning because I can’t fight the current.

Finally, I hear a voice from heaven say, “Grab that baby the mom is drowning!!! Hurry, GRAB THE BABY!!!

I just knew right then that my baby was gonna be okay.  I lunged her forward with all my might and took my last breath and told Savannah I loved her.  I was then sucked back under swallowing more water my mind was calm though because she was safe…..  A few moments later a hand grabbed my arm and pulled me out too.  In shock and panic I seen my baby and went to grab her but, the man said to calm down and wait because we were still in the water.

Now, we are just trying to get to safety.  All the other tubers behind us didn’t realize what had happened so, they are running into us not realizing we have a baby.  When finally a man gives us his tube and they put my baby on it and tubed her across to the man on the other side. I then slid down in the rocks to the other side and got my baby and waited for our heroes.  I will never forget them nor will I ever be able to thank them enough for saving our lives.

I did end up with tons of bruises, a pretty bad scrape on my right leg, broke my toe, and bruised my right knee pretty bad.  But, none of that matters because my Savannah was worth it and she didn’t have a scrape or bruise on her 🙂

Eating Healthy and Getting Groceries!!

Today I found myself in the grocery store since, my cupboards and fridge were completely empty!  I decided as soon as I walked into the store that I was gonna buy healthy foods and healthy snacks.  So, I avoided some of the aisles I usually shop down for snacks and I bought organic meats.  I did grab a few snacks for the children that they can have as a desert but, I decided it will be a treat not an everyday snack.

Butter: Instead of butter which, I use to cook pretty much everything, I bought olive oil.  Yes, it’s a bit more pricey but, my body will thank me for it later.

Snacks:  I bought fresh fruit apples, oranges, bananas, strawberries, and blue berries. I did buy one thing of cookies for an after dinner snack once a week.

Sides:  I still bought Mac n cheese but, I got beans, rice, stuff to make salads, and more veggies.

Meals: I only bought one pasta meal this time which, is saying a lot for me lol.  The rest were chicken based, 1 pork, 1 ham, and 1 steak meal.

I also bought deli lunch meat, white wheat bread as I am slowly getting used to eating all wheat based breads.

I know it wasn’t a perfect trip but, It’s a start to a healthier family.  I will say I spent 400 dollars so, I am going to have to start collecting coupons.  🙂

Fry Bread and Chili Recipe

Who doesn’t love a good chili!?!  Doesn’t matter what time of year or what occasion, chili is always good.  So, for a few years now I have been trying diff things in my chili and last night I made the best chili I have had in a long time.  Which, for me to brag about my own cooking is something lol 🙂

What you will need for chili: (Start Cooking chili early in the day for dinner time)

  • 2lbs hamburger meat
  • 1 can chili beans (hot)
  • 2 cans Red Kidney beans
  • 1 can medium Rotel
  • half onion diced
  • half green bell pepper diced
  • 3 tbs chili powder
  • 1 tbs season salt
  • 1 teaspoon cinnamon
  • 1 tbs crushed red peppers
  • 8 jalapeno slices fresh or pickled
  • 1/3 cup jalapeno pickled juice
  • half a bottle of Spicy V8 Juice

What you will need for Fry Bread: (start about 20 min before you serve chili)

  • 4 cups white lily flower
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 48 fl oz of Canola oil
  • rolling pin

Cooking the Chili:

Get a large skillet and put half of the diced onions, all of the diced green peppers, hamburger meat, 1 tbs chili powder, 1/2 tbs season salt, 1/2 tbs crushed red peppers and cook until a little pink is left in the meat then add 1 more tbs chili powder, 1/2 tbs season salt, 1 teaspoon cinnamon, and 1/2 tbs crushed red peppers.  Cook until brown and drain grease.

Get out a large pot place cooked hamburger meat, 1 can chili beans, 2 can red kidney beans, 1 can medium Rotel, other half of diced onions, 8 jalapeno slices, 1/3 cup jalapeno juice, half bottle of Spicy V8 Juice, and 1 tbs chili powder.  Bring to a boil then reduce heat to medium low and let simmer 4 to 5 hrs for best tasting results.

Making the Fry Bread:

in a deep frying pan or a frying pot get canola oil ready on high heat.

in a large mixing bowl combine 4 cups white lily, 1/2 teaspoon salt, 1 teaspoon pepper and blend well. then add 1 cup of milk and mix together till all the flour is off the sides.  On a clean empty counter space spread flour on the counter so the batter will not stick.  Then place fry bread batter on the floured counter top knead 2 times and then use rolling pin until it’s about an inch thick.  Check for stickiness if there are any sticky spots spread that spot and add a little more flour to it.  You do not want the dough to be sticky.  Once you are ready take a pizza cutter and cut into medium sized squares and then diagonally cut a small line inside of each square.

make sure you have a little piece to check oil with.  Use your little piece to see if oil is ready it should only take a few minutes for the little piece to turn golden brown. That is when you know it is ready.  Cook 1 to two pieces of fry bread at a time and flip over to make sure both sides are golden brown before they are done.

Place fry bread on plate and chili on top and fix it up with some lettuce, tomato, cheese, and sour cream 🙂 Enjoy!!

Refrigerate left overs because you know chili is even better the next day 🙂

My Health and Wellness Journey!!

As a woman who has had two c-sections it has been hard to get some of the weight off of my belly!  I have taken a before pic recently and I will be posting monthly updates so, we can go through this journey together.  I am super excited to start seeing and sharing my results with you all.  Also, along during this journey I have decided to start selling health and wellness products which, I will be sharing as well.  Today is day 4 of the healthier me journey.

Products that I am using as of right now is called Ultimate Body Applicator, and Thermofit.  Both are so far amazing products.  I will be adding Fat Fighters and a monthly 2 day Cleanse.  All the products I am using are all natural products.  I have several friends who have take this journey and have fantastic Success stories! Raising Your Blood Children and Non Blood Children In The Same Home Tips

Growing up I didn’t know my real father (I still do not know him) but, I had an amazing Dad.  Some of you may not understand that statement but, a parent who raises a child blood or not is still a parent! To me the term step-mom or step-dad sounds harsh.  I called my “step-dad” Dad, most people didn’t even know he wasn’t my birth father until I told them.  I feel the same goes for Children too.  If you are not the child’s biological parent you don’t have to call them your step-daughter/son or your step-children.  Instead you can just claim them as your own.  I mean you are involved in their lives and are helping to raise them.  My dad has always called my siblings and I his children.  Made us feel accepted and loved.  My whole point, is that you should treat your family equally and if you have “step-children” claim them as your own.  Nothings feels better than being accepted by those you love!

Here are a few tips:

  1. Involve all children in your home in decision making and or family votes. Let them have a voice too. 
  2. Make sure to use the same punishments on your own children as you do your significant other’s children.  You do not want any child, yours or your significant others child/ren to feel as if they are treated differently or more harshly.  Be fair and concise.
  3. Take one day a week to spend one on one time with each child and talk about them and what is going on in their life.  Get involved
  4. If you are at a point to express love to your significant others child/ren then, tell them you love them.  Don’t make them say it first or feel as if they are not loved because you are not sure how to express yourself.  Just do it!!!  Express your love 
  5. Do not and I repeat Do not talk bad about their parent/s whether it is your child/ren’s or your significant others child/ren’s parent/s!  No child deserves to here any negativity or your opinion about someone they love and who loves them back even, if you do not like them!  By the same token do not let any child living under your roof or staying part-time under your roof talk bad about their parent/s!  Teach Respect and Manners
  6. Do not and I again I repeat Do Not argue in with other parent/s in front of your child/ren this, just shows them that it is okay to lash out and in turn they might feel that it’s okay.  Set a good example
  7. Let your child/ren all know that they can come to you and count you whether it is good or bad!!  Show interest, humility, and compassion

How to get along with ex’s significant other/spouse!

For me getting to know the person who is going to be in my child’s life is very important.  I know that some of you out there are like: “OH HELL NO! No other man/woman is gonna help raise my child!!”  Well, I am sorry but, that is the wrong attitude to have especially, if you care about your child.  At this point it is not about you or your ex it is about your child and helping them through the process of being in two different homes.  Also, letting them know that you both love your child but, things did not work out between mommy and daddy.

So, here are a few tips from my experience:

  1. Show interest in ex’s relationship, not to be nosy either; but, because you want to know the potential step parent in your child’s life.
  2. Talk to potential step parent about life where they come from and where you come from. Build a relationship with this person and become friends. Hell, if they are in it for the long hall make them like family to you.
  3. Share stories, laugh, joke, cry, and let them know that it is o.k. for them to help raise your child.
  4. Once they have been in your child’s life for awhile and you’ve gotten to know them, let them know how much you appreciate them and their help. Realize as hard as it is for you, it is just as hard on them.  A step parent doesn’t have to be there for your child, they chose to be.  Always, Always remember that.
  5. Try not to label them either. For example, I do not call Kiara’s dad’s wife step mom; I call her Kiara’s other mom 🙂 and when I am being funny I call her my baby momma lol 🙂
  6. Do things together, call each other and chat about life, and vent to each other when you need too. Why not that’s what family is for and if you don’t want to call them family then hey, that’s what friends are for.
  7. Never look at it like it’s not your responsibility to get involved with the ex’s significant other because it is.  Just as much as it is for them to be involved when you move on too.
  8. Just remember too that you are setting an example for your children and for when they become adults.  You don’t want to teach them any childish games.  And you don’t want to teach them to disrespect either one of you.  So, start by showing them how to be respectful!! 🙂

I honestly have built a relationship with both of the other women in  my life my ex’s wife and my husband’s daughter’s mom.  And I love them both and I respect them both.  To me that’s what makes one big happy family without drama and with a whole lot of teamwork!!  Communication is key!!

My mom, Carla, the prankster!!!!

My mom was the biggest joker I knew growing up. I guess, you could throw in prankster too.  Which, is most likely why I was a class clown/smart ass in high school. :-p There are honestly to many stories to share in one post but, I will share the 2 that stick out the most.  She was definitely not your average mom that’s for sure.

  • Don’t play with knifes!!

April 1st 1991, (a.k.a April Fool’s DAY) i was 5 years old and my sister Jess, was only 4 yrs old.  Well, we all know a pranksters favorite day is April Fools but, my sister and I were not actually old enough to know this or, remember it from the year before.  So, my mom gets the bright idea that she is going to play a prank on us.  She approaches my sister and I with a white ring box, crying.

Sobbing, she says, “Girl’s I cut my finger off!!!”

We of course freak out and ask what happened and look in the box.  Where her “what seemed to be lifeless” finger laid on top off a few cotton balls and was covered in “what seemed to be” blood.  We then start crying and tell her that she needs to go to the hospital so she can get it glued back on.

mom then starts laughing and says, “Girls, it’s just a joke!!! Look, I’m okay!!!”

When we look she is sliding the box up over her finger through the whole she had cut in the bottom.  She then licks her finger still laughing like crazy and says, “It’s just ketchup!!!”  She then says, “Now don’t play with knifes or this is what could happen!”  I swear lol.  Now when I tell people I can’t help but to laugh.

  • Peanut Butter Fun!!!

Mom’s once a month trick, that I honestly never figured out until I actually got a mouth full. lol

For as far back as I can remember mom chased us around the house with peanut butter on her finger telling us that it was poop from wiping her butt.  lol Don’t ask, I warned you that my mom is silly.  We always got away or barely got away by her touching our shirt or something lol.  Wasn’t a bad joke just grossed us out and would make us gag. lol

So, around the age of 9, mom quits letting us get away so easily.  She was chasing me and I had almost made it away from the poo finger lol.  When, all of a sudden, mom hooks me and her finger landed in my mouth!!!!

“AAAAAAHHHHHH”, I scream and then start gagging and throwing up.  Which, lol I realized right then that what I had swallowed was peanut butter and it clicked lol.  So, you mean this whole time she was chasing me with peanut butter!?!  Yes, Yes she was!!!  I was so grossed out but, started laughing because I really thought that she was mean enough to put poop in my mouth lol.  No, she would never give us poo.  She just wanted to see how far she could push it.  lol

Those are just a few so, I hope you can imagine what else she might have done!!! 😛

Kiara’s Birth March 12th 2006!!!

I was 20 years old when I had my oldest daughter, Kiara.  I thought that I was gonna have the perfect birthing process since, my pregnancy was easy.  Man was I wrong!!

I went into labor at 8p.m. on March 11th 2006.  Labor wasn’t bad when it started but, I was timing the contractions right so, I wouldn’t go to the hospital to early.  When the contractions were 3 minutes apart I woke my mom up so, she could drive me.  Which, she was super excited because Kiara, was set to arrive on March 12th.

Mom and I headed to the hospital with bags I had prepacked like 5 weeks or more prior LOL (Nesting Stage)

When we arrived to the hospital my contractions were 2 to 3 min apart still which, was bearable.  I chose to not have an epidural because I wanted, like most moms, to have a natural birth. hahahahaha Man what was I thinking? Oh yeah, I had never experienced giving birth.  My water broke about 2 hrs after arriving at the hospital.  Which, I thought that means baby should be here soon! WRONG AGAIN!!!

Since, my water had broke and we thought baby should be coming any minute we called everyone.  I called baby’s dad who was in Korea to let him know she was coming.  My mom called my Stepdad (my dad tbh) and brother, the preacher and his wife.  So, everyone arrived at the hospital by 2 a.m. which, I had been in labor for 6 hrs.  Not bad I was still doing good with the pain.

At 4 a.m. My doctor came in so, she could see how much I was dilated now.  While she was checking she noticed that even though my water had broke, there was another sack. So, I am 5 cm dilated and there is still a sack which, was probably why baby hadn’t come yet.  The Doctor then takes a crochet looking needle and broke my water,again.  I thought my water broke the first time lol.  This time it was gushing everywhere and not only is it gushing but, I also start throwing up water like crazy.  Water would gush out and then a few seconds later I would throw up and repeat.  This went on for 10 min.

After the exorcism experience lol, the doctor recommended me walking around to help the process along.  I go through walking and laying down for like 2 hrs when, my doctor checks how far I am dilated again.  I was still only 5cm.  Ahhhhhh lol By this point I can’t take the pain anymore it is 6:45 a.m. and have been in labor for almost 11 hrs.  My doctor said I should get the epidural because, sometimes a woman can go into labor for a long period with her first child.  I though, Dang how much longer lol

I caved and said, “okay do what you have to do.”

I rest and walk around trying to get miss stubborn Kiara to come out until 6 p.m.  What!!!! I am going on almost 24 hrs of labor by this time.  My doctor has been checking me on and off I still hadn’t dilated past 5cm.  Then, mine an babies vitals started acting up.  She then tells me I need to have a c-section.  Which, I try to refuse, I mean come on I was in labor this ling surely I can have her naturally.  She then explained to me that because of her position and our vitals that this could lead to death of baby, me, or of both of us.  So, I cry and decide that I have to have a c-section.  Kiara, was born at 7:45 p.m. on March, 12th 2006.  The most amazing, crazy experience I had ever had.   My emotions were all over the place but, it didn’t matter because I had just found out what true love was.

Kiara, is still stubborn to this day lol.  She started from day one with that so, I don’t know if that will ever change lol 🙂

Spicy grilled Burgers :) Angel and Eddie’s Recipe

I know most of my recipes are spicy but, I live flavor!!

Eddie is my brother and the youngest out of my mom’s children.  We usually try to come up with great recipes together; we both love to cook and eat lol.

This will make 11 normal sized burgers.  Thickness is up to you!

Prep Time 10 min:

Start up your grill!!

What you need:

  • 2 lbs hamburger meat
  • 1 tbs season salt
  • 2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoon steak rub
  • 2 teaspoon Worcestershire sauce
  • 2 teaspoon garlic
  • 20 diced jalapeno slices
  • 1/4 cup jalapeno juice
  • 3 to 4 tbs mayo
  • 1/3 onion diced
  • 1/2 can mild Rotel

Combine all ingredients together in large mixing bowl.  Round out patties lightly and make a slight thumb impression on one side.  Mayo should help hold them nicely together as well as keeping them moist.  Grill should be ready so, place them on grill with an ice cube on top to keep moisture. cook on each side for 10 to 15 min now this also depends on thickness of your burgers.  If you only made say 6-8 patties then try 15 – 20 min on each side 🙂

Top with your favorite toppings!
