Fry Bread and Chili Recipe

Who doesn’t love a good chili!?!  Doesn’t matter what time of year or what occasion, chili is always good.  So, for a few years now I have been trying diff things in my chili and last night I made the best chili I have had in a long time.  Which, for me to brag about my own cooking is something lol 🙂

What you will need for chili: (Start Cooking chili early in the day for dinner time)

  • 2lbs hamburger meat
  • 1 can chili beans (hot)
  • 2 cans Red Kidney beans
  • 1 can medium Rotel
  • half onion diced
  • half green bell pepper diced
  • 3 tbs chili powder
  • 1 tbs season salt
  • 1 teaspoon cinnamon
  • 1 tbs crushed red peppers
  • 8 jalapeno slices fresh or pickled
  • 1/3 cup jalapeno pickled juice
  • half a bottle of Spicy V8 Juice

What you will need for Fry Bread: (start about 20 min before you serve chili)

  • 4 cups white lily flower
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 48 fl oz of Canola oil
  • rolling pin

Cooking the Chili:

Get a large skillet and put half of the diced onions, all of the diced green peppers, hamburger meat, 1 tbs chili powder, 1/2 tbs season salt, 1/2 tbs crushed red peppers and cook until a little pink is left in the meat then add 1 more tbs chili powder, 1/2 tbs season salt, 1 teaspoon cinnamon, and 1/2 tbs crushed red peppers.  Cook until brown and drain grease.

Get out a large pot place cooked hamburger meat, 1 can chili beans, 2 can red kidney beans, 1 can medium Rotel, other half of diced onions, 8 jalapeno slices, 1/3 cup jalapeno juice, half bottle of Spicy V8 Juice, and 1 tbs chili powder.  Bring to a boil then reduce heat to medium low and let simmer 4 to 5 hrs for best tasting results.

Making the Fry Bread:

in a deep frying pan or a frying pot get canola oil ready on high heat.

in a large mixing bowl combine 4 cups white lily, 1/2 teaspoon salt, 1 teaspoon pepper and blend well. then add 1 cup of milk and mix together till all the flour is off the sides.  On a clean empty counter space spread flour on the counter so the batter will not stick.  Then place fry bread batter on the floured counter top knead 2 times and then use rolling pin until it’s about an inch thick.  Check for stickiness if there are any sticky spots spread that spot and add a little more flour to it.  You do not want the dough to be sticky.  Once you are ready take a pizza cutter and cut into medium sized squares and then diagonally cut a small line inside of each square.

make sure you have a little piece to check oil with.  Use your little piece to see if oil is ready it should only take a few minutes for the little piece to turn golden brown. That is when you know it is ready.  Cook 1 to two pieces of fry bread at a time and flip over to make sure both sides are golden brown before they are done.

Place fry bread on plate and chili on top and fix it up with some lettuce, tomato, cheese, and sour cream 🙂 Enjoy!!

Refrigerate left overs because you know chili is even better the next day 🙂

Spicy grilled Burgers :) Angel and Eddie’s Recipe

I know most of my recipes are spicy but, I live flavor!!

Eddie is my brother and the youngest out of my mom’s children.  We usually try to come up with great recipes together; we both love to cook and eat lol.

This will make 11 normal sized burgers.  Thickness is up to you!

Prep Time 10 min:

Start up your grill!!

What you need:

  • 2 lbs hamburger meat
  • 1 tbs season salt
  • 2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoon steak rub
  • 2 teaspoon Worcestershire sauce
  • 2 teaspoon garlic
  • 20 diced jalapeno slices
  • 1/4 cup jalapeno juice
  • 3 to 4 tbs mayo
  • 1/3 onion diced
  • 1/2 can mild Rotel

Combine all ingredients together in large mixing bowl.  Round out patties lightly and make a slight thumb impression on one side.  Mayo should help hold them nicely together as well as keeping them moist.  Grill should be ready so, place them on grill with an ice cube on top to keep moisture. cook on each side for 10 to 15 min now this also depends on thickness of your burgers.  If you only made say 6-8 patties then try 15 – 20 min on each side 🙂

Top with your favorite toppings!

Homemade Fried Potatoes!

Prep Time: 5 min

Cook Time: 20 min

I like my Fried potatoes to be flavorful so, if you are like me here is how I cook my them.

What you need:

  • 8 medium sized potatoes
  • 2 tbs olive oil
  • 1/2 onion diced
  • 1/2 green bell pepper diced
  • 1 teaspoon salt
  • 2 teaspoon pepper
  • 1 tbs Italian seasoning
  • 1/2 teaspoon crushed red pepper
  • 4 tbs butter

First put 2 tbs olive oil in large frying pan.  Slice 8 medium sized potatoes place half of them in the frying pan adding onion bell pepper.  Then sprinkle half of your salt, pepper, Italian seasoning, and crushed red pepper.  Start cooking on medium high heat.  Then place other half of sliced potatoes in the pan sprinkling the rest of your seasonings over top and adding 4 tbs of butter in different areas over top of potatoes.   Put lid on frying pan and let fry for 5 min. Take lid of pan flip and stir potatoes around and then put lid back on let fry for another 5 min.  Turn heat down to medium low heat flip and stir potatoes again and let cook for another ten min checking and flipping until done.  If you prefer crispier potatoes keep on medium high heat until done.

I use this recipe with meatloaf, pork chops, chicken whatever you want.

Then sometimes when I want what I call a hobo dinner I just cut up a 3 Johnsonville medium or spicy flavored brats in it and now you have a quick easy meal and hardly any mess to clean up.

Angel’s Spicy Meatloaf Recipe!!!

Prep time: 10-15 min

Cook time: 50 min

What you will need:

  • 1 lb hamburger meat
  • 5 diced pickled jalapeno
  • 1/2 onion diced
  • 1/2 green bell pepper diced
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon pickled jalapeno juice
  • 1 can mild or hot Rotel
  • 1/2 pack of Ritz Crackers crushed
  • 1 egg

Glazed Ketchup Topping:

  • 1/2 cup Ketchup
  • 1 tbs mustard
  • 2 tbs brown sugar

mix together until brown sugar is fully blended in.

Pre-heat oven 400 degrees

In a large mixing bowl combine meat, diced jalapeno, diced onion, diced bell pepper, pepper, salt, cinnamon, Worcestershire sauce, jalapeno juice, 1 can mild Rotel,  Then mix in 1 egg and 1/2 pack of Ritz crackers crushed.  After mixed place into medium 9 x 12 glass baking pan.  Then spread ketchup glaze evenly over top of meatloaf and bake for 50 min.

While baking you can make any sides you prefer to go with it.  I usually do mac-n-cheese and fried or mashed potatoes.  If you like homemade sides I will be adding recipes for sides soon.

My stuffed Bell Peppers Recipe!!!

no prep time everything can be prepared while cooking.

Cook time: 30-40 min

What you will need:

  • 5 -8 Green Bell Peppers
  • 1 lb hamburger meat
  • 1 can re-fried beans
  • 1 package taco seasoning, original, mild, medium, spicy, whatever you like. I use spicy.
  • 1/2 onion diced to cook in meat.
  • 1 box Spanish Rice (Rice a Roni)
  • 2 tbs butter
  • 1 cup water
  • 1 can Mexican style Rotel
  • 1 package 8 oz cream cheese
  • 1 bag of shredded Mexican 4 cheese blend
  • 1 tomato diced for topping
  • lettuce chopped for topping
  • 1/2 Onion diced for topping
  • Sour cream, jalapeno, salsa etc whatever else you like as toppings

Start with cooking Spanish Rice in large skillet.  First saute on medium heat with two tbs butter until Vermicelli is golden brown.  While rice sautes:

Cut the tops of Green Bell Peppers off and take the seeds out rinse off place them in a pot half full of water and boil over medium heat when water boils boil for ten min.

After rice sautes add 1 cup of water, 1 can of Mexican style Rotel, and the Spanish rice seasoning mix that came in box of Spanish rice.  Stir and bring to boil reduce heat and let simmer 20 min.  While rice simmers:

Pre-heat oven to 350 degrees

Start cooking 1 lb hamburger meat in medium skillet. While cooking the meat cut 1 onion into diced pieces and place 1/2 of the diced onion into the hamburger meat.  Place other 1/2 of diced onion into a container for toppings. dice up one tomato, some lettuce and place your other toppings on counter in a line to set up for when ready. Once hamburger meat is completely brown then add taco seasoning let cook on medium heat for 5 min.  while meat cooks 5 min longer:

Drain Green bell peppers as they should be ready at this time, place into glass baking pan to cool off.  Then mix hamburger meat, 1 can re-fried beans, and 1 8 oz package of cream cheese into the Spanish rice. let cook for 5 min.  while mixture is cooking:

cut Bell peppers in half and then place mixture into each half.  Sprinkle with shredded Mexican 4 cheese blend, then place in oven and let bake for 5 min.

Then enjoy

whatever mixture is left if any can be used as a chip dip.  I like Cool Ranch Doritos myself but, you can use anything.
